Limoncello
VegetarianLimoncello is a classic Italian after-dinner digestif. liqueur traditionally made by infusing fresh lemon peels in high-proof grain alcohol. However, this is a less potent version made with Vodka. if you don't like too much sugar go with 1/2 a cup of sugar. if you like a little kick at a jalapeno pepper (cut in half) an hour before straining the zest.
Ingredients
5–6 organic lemons (just the zest)
1 standard bottle of vodka
1 cup sugar
1 cup water
Instructions
1. Zest the lemons (just the yellow part, not the bitter white pith).
2. Place zest in a clean jar and pour the vodka over it.
3. Seal and store in a cool, dark place for 5–7 days. Shake it gently once a day.
4. strain out the zest.
5. In a saucepan, heat the sugar and water just until the sugar dissolves (don’t boil).
6. Let the syrup cool completely, then mix it with the infused gin.
7. Bottle and chill in the freezer for a few hours or days before serving.
