Street Tacos - Chicken

This is a simple, somewhat healthy and easy to make meal that tastes great. I didn't add it to the ingredient list, but I like to add chicken bouillon and some water to the shredded chicken as it simmers. This adds a nice flavor.


Ingredients

1. Rotisserie chicken
2. Can of corn
3. Can of black beans
4. Jar of pickled onions
5. Light sour cream
6. Taco Seasoning (and any other spices)
7. street taco tortillas

Instructions

1. Shred the chicken with a fork and add it to a frying pan with some olive oil and a few tablespoons of water (I often add a half teaspoon of chicken bouillon to this as it simmers. Also, season with taco season.
2. combine the corn and the black beans in a another pan. Season with taco seasoning and any other spices you like. (I often add chili powder, black pepper).
3. heat up the tortillas for 2 minutes at 350.
4. build your tacos. Add the chicken, the corn/beans, some pickled onions and a dollop of sour cream.
