An Italian Christmas Tradition


Ingredients

Potatoes (home fries or anything like that)
Onions
Sundried tomatoes
Halved cherry tomatoes
Brocolli and/or spinach and or aspargus
Roasted Red Peppers
Cheese - mozzarella or cheddar or both
Bacon
Garlic
Eggs

Instructions

Sautéed onions and garlic until they brown. Diced Asparagus, broccoli and or spinach. Also dice or halve cherry tomato’s, roasted peppers, some sun dried tomatoes. Let this simmer for five minutes. Add pepper, a pinch of salt, and Italian seasoning. In the oven roast potato wedges at 425 for 15 minutes. Add all this to the pie pan. Fill in with eggs (about 4 or 5 eggs). Add a cup of shredded mozzarella and more of the spices mentioned earlier. Mix everything.
If you like bacon you can add that to the mix (cooked already) or have it on the side

Bake @ 375 for 35 minutes
