Chickpea Greek Salad

Salad

Delicious twist on a traditional Greek salad.


Ingredients

One can of chickpeas
Two tablespoons of Shawarma Spice
Two whole wheat pitas
5 oz of grape tomatoes
One cucumber
Greek Vinaigrette dressing (Ken’s)
7 oz of Spinach
¾ cup of feta cheese (crumbled)

Instructions

1. Preheat oven to 425
2. Drain and rinse chickpeas, then dry them with a paper towel. Place on a baking sheet. Drizzle with olive oil and half of the shawarma spice. Season with salt and pepper. Heatig on top rack fro 18 to 20 minutes
3. Break pitas into 1 inch pieces. Toss on a baking sheet with the same seasoning as the chickpeas… shawarma, olive oil and salt and pepper. Cook on bottom rack for 7 to 9 minutes.
4. Half the tomatoes and quarter the cucumber.
5. In a salad bowl add ¼ cup of dressing with 1 tablespoon of sugar.
6. Add tomatoes, cucumbers, spinach, chickpeas, the feta cheese and pita. Mix well. Season with salt and pepper and enjoy.
