Vegetarian Meatloaf

Beyond and Impossible meats are not the healthiest meat alternatives, but for someone trying to give up meat and not quite ready to give up the taste and texture of meat these products are pretty good options and this recipe is darn tasty! The recipe is easy to prepare and 95 percent of your time is waiting for it to bake in the oven.


Ingredients

1/4 cup Onions
1/4 cup Carrots
1/4 cup Ketchup
1/4 cup Celery
2 packs Ground Beyond/Impossible Meat

Instructions

Step 1: Dice veggies (onion, celery, carrots)
Step 2: Saute the onion, celery and carrots together for five to ten minutesin a frying pan to soften. Don't cook as long if you like your veggies to have a little crunch in your loaf.
Step 3: Let the veggies cool for a couple minutes and then move them to a baking dish. I use pyrex.
Step 4: Season with salt, garlic powder and ground pepper.
Step 5: Mix in some ketchup (ΒΌ cup).
Step 6: Add ground plant based beef. Mix it around so vegetables are evenly distributed and form into a loaf
Step 7: Bake in the oven at 350 for 40 minutes. Half way through take it out and top with ketchup
